Feeling uninspired with menu planning? Here are some v easy, v quick meals

Is anyone else feeling uninspired about cooking? Back in the olden days (pre-COVID), we used to eat out a lot. Every weekend we would eat out, and when I was working in an office, I would eat my lunch out a few times a week too. I realise now that I completely took it for granted. That concept feels completely alien now.

Planning our food for the week & keeping everyone happy but also trying to cook healthy meals can sometimes feel like a big task. & sometimes I just cannot be bothered with it. So, for anyone who wants to free up some headspace or is having a mental blank and cannot think about what to put on the menu this week; Here are some healthy, easy & quick ideas for meals that you can put together with super straightforward ingredients:


Breakfasts:

  • Porridge with berries, peanut butter, seeds & banana

  • Smoothie with frozen fruit, avocado & spinach

  • Yoghurt, fruit & (low sugar) granola

  • Eggs & spinach

Lunches:

  • Baked potato with salad / hummus / avocado / roasted red peppers / tinned fish 

  • Fresh soup

  • Big salad with some chickpeas, sweetcorn, seeds, chopped up boiled egg & fresh herbs

  • Avocado toast with a side of mushrooms or tinned toms

  • Omelette with any veggies you have in the fridge/freezer

  • Home made baked beans ( I can recommend the Bosh recipe) on toast

Dinners:

  • Stir fry with all of your fave veggies and rice noodles 

  • Salmon fillet with broccoli & peas

  • Bean chilli (loads of recipes via Google, but can recommend the Bosh ultimate chilli or the Deliciously Ella 5 bean chilli)

  • Roasted root vegetable traybake. Mix up the favours by adding lemon or orange zest or adding fresh herbs at the very end. Add texture by adding chickpeas or cannellini beans or top with breadcrumbs

  • Curry with any veg you have in. I recommend finding a recipe with a really easy base (such as this: https://madeleineshaw.com/recipes/butter-chickpea-spinach-curry/) and then using whatever veg you like

  • Quick ratatouille (you can buy this frozen) with flatbread
